Buffalo-Blue Meatball Subs!

I made these for my coworkers tonight to test out a new product. Seems to have gone over rather well…*g*

This recipe has two variations: For people who DO have Trader Joe’s, and people who don’t. People WITH Trader Joe’s go first.

TJ’s Buffalo-Blue Balls (Yes. I went there. Bite me.)

1 pkg Buffalo Blue Cheese Chicken Meatballs
1 cup Ranch Dressing
Slices of blue cheese
Brat Buns

Microwave the meatballs until heated through. Toss with ranch dressing. Fill brat buns, top with sliced cheese. Throw into the oven on broil until the cheese is bubbly. Enjoy!

Variation: Add BBQ sauce to the ranch dressing, or substitute ciabatta bread for brat buns.

People-Who-Do-Not-Have-Trader-Joe’s: Blue Balls the hard way!

1 package meatballs
2 cups ranch dressing
1/2 cup crumbled blue cheese
Buffalo seasoning to taste
Sliced cheese
Brat buns

Heat meatballs. In a separate bowl, mix ranch dressing, blue cheese and buffalo seasoning. Pour over meatballs. Prepare as directed above.

Funny name aside, these really do go over well, and they are unusual. Pair with a cold beer, and you’re all set!
